This soup is the perfect soup for those MANY rainy spring days. It is warm and comforting but fresh and...springy... at the same time! And BONUS! It helps use up all those greens in the fridge that may be slightly passed their "Best Before" dates.

ILIOS Wilted Lettuce Soup is the perfect recipe for that rainy spring day

Ingredients:

  • ½ stick unsalted butter

  • ½ onion (chopped)

  • 3 sprigs thyme (just the leaves)

  • 1 small potato (peeled, cut into 1-inch pieces)

  • 4 cups ILIOS chicken broth

  • 4 cups mixed wilted greens (chopped)

  • 1½ cup ILIOS frozen peas, thawed

  • salt & pepper (to taste)


Recipe:

  1. Melt butter in pot over medium heat.

  2. Cook onion and thyme first, stirring often for about 5 minutes.

  3. Add potato and stir for an additional 3 minutes.

  4. Add broth and bring to a boil. Cook for another 10 minutes.

  5. Stir in greens and peas, remove from heat, and let sit for about 10 minutes.

  6. Purée soup in a blender until smooth. Season with salt and pepper.

  7. Serve with crème fraîche and chopped herbs (chives, tarragon, mint, parsley)

More Snacking

Healthy snacking will also become even bigger in 2021. It has been a trend for the past few years. Given so many of us are working from home recently, we’re snacking a lot more than we used to. Plus, we are all in need of added energy throughout the day.

Comfort Food, But Make it Healthy

“For 2021 the trends will go towards comfort and simplicity. This is due to the pandemic we will see a return to meals that focus on comfort, experts say.

There will likely be a greater focus on stew and curry. Curry can offer so much to the diner. It’s interesting, exciting, and comfortable and accessible. This is just an example so you can let your imagination run free and nostalgic.

More fermenting, preserving, and canning

Fermentation is becoming really big again, same with canning and preserving. Jarred, canned, preserved, pickled and fermented will be used as much as it could be especially for Chefs. It indeed allow them to still be able to support their farms.

Has anyone else tried frostings made with unconventional cheeses?


Today is #cupcakeday. We will not be sharing a cupcake recipe but this original frosting that you can make with your favorite ILIOS brie!



The subtle twist: brie and cream cheese frosting. Odd-sounding at first, this pairing really isn't surprising when you consider all the fruit and cheese appetizers we enjoy?





INGREDIENTS


1 cup cream cheese, cool room temperature

1/2 cup ILIOS brie, softened and with rind removed

1/4 cup unsalted butter, room temperature

1 teaspoon pure vanilla extract

2 1/2 cups sifted powdered (confectioner's) sugar


INSTRUCTIONS


In a large bowl beat the brie, cream cheese, and butter until softened and smooth (but do not overbeat). On low speed beat in the vanilla and powdered sugar. Start with 1 1/2 cups of sugar and add more to achieve desired sweetness and stiffness. Finally, beat on high speed for a few moments until smooth.
